Our client is seeking an experienced Larder Chef with knowledge in specific dietary requirements. You will be responsible for efficient storage and preparation of cold foods and ensure proper food handling, cleanliness, and hygiene, and you may also prepare and assemble cold dishes for various events and meals.


Key responsibilities for this role include:


Food Preparation:
Prepare and assemble cold dishes, including salads, appetizers, charcuterie, and sometimes cold desserts.


Food Storage:
Maintain an organized and efficient larder, ensuring proper storage methods to prevent spoilage and waste.


Knife Skills and Equipment Handling:
Develop and maintain proficiency in knife skills and the safe operation of kitchen equipment.


Hygiene and Sanitation:
Maintain a clean and sanitary larder to prevent contamination and food poisoning.


Collaboration:
Work collaboratively with the head chef and other kitchen staff to ensure smooth kitchen operations.


Food Quality and Quantity:
Ensure that the quality and quantity of food meet standards and are appropriate for various needs.


Inventory Management:
Keep track of inventory, place orders for supplies, and maintain records of what comes in and out of the larder.


Training:
Train interns on larder procedures, food preparation, and equipment use.


About you:

  • Experience within specific dietary requirements such as gluten free, dairy free, vegan, vegetarian, etc.
  • Extensive knowledge in cookery
  • Weekend and shift work is essential
  • Excellent communication skills
  • You will need to have your own knives, chef shirt and wear appropriate footwear


Rosters will vary and are sent out two weeks in advance.
